So delicious, keeps those dessert cravings at bay, super easy and a fantastic way to bump up your protein intake.
2 whole eggs 30 rolled oats (blended/processed to a powder) 1 serving of your favourite protein powder (I love strawberries and cream by Nutrabolics) 1 tsp vanilla essence (optional) 1 Tbsp water Optional: Almond meal, flax meal, psyllium husk etc.
Whisk eggs together with vanilla essence and water. Stir in dry ingredients. (You may need to add more water to make the consistency how you like it - but remember the runnier it is, the more it tends to stick to the pan and be less fluffy )
Heat non stick pan over low to medium heat. Pour batter to desired pancake size. If you like your mix thick, you may need to spread it with a spoon. When bubbles cover the surface of the pancake, flip and cook for another minute or until golden brown.
Suggested toppings: Fresh fruit sugar free/low calorie maple syrup Vitarium Du Chocolat sugar free chocolate powder Peanut butter (PB2 for lower calorie) Cinnamon Lemon juice
