So delicious, keeps those dessert cravings at bay, super easy and a fantastic way to bump up your protein intake. Ingredients:2 whole eggs 30 rolled oats (blended/processed to a powder) 1 serving of your favourite protein powder (I love strawberries and cream by Nutrabolics) 1 tsp vanilla essence (optional) 1 Tbsp water Optional: Almond meal, flax meal, psyllium husk etc. Method: Whisk eggs together with vanilla essence and water. Stir in dry ingredients. (You may need to add more water to make the consistency how you like it - but remember the runnier it is, the more it tends to stick to the pan and be less fluffy ) Heat non stick pan over low to medium heat. Pour batter to desired pancake size. If you like your mix thick, you may need to spread it with a spoon. When bubbles cover the surface of the pancake, flip and cook for another minute or until golden brown. Suggested toppings: Fresh fruit sugar free/low calorie maple syrup Vitarium Du Chocolat sugar free chocolate powder Peanut butter (PB2 for lower calorie) Cinnamon Lemon juice So so so good!
