I found this one on Pinterest, and it was so good during prep, and because my fats were still high I could have it with guacamole too (well kind of just mashed avocado lol) Ingredients:800g White fish of your choice (I used Hoki, but any will do) Juice from 1 lime 1 tsp chilli powder 1/2 tsp salt 1/4 tsp cumin 1 tbsp butter (oil, fat free spread, whichever) 1/2 - 1 tsp oregano/parsley/corriander (I like corriander) Method:Heat oven to 220 degrees celcius Lightly spray oven safe pan/tray Place the fish in the pan and sprinkle with the chilli powder, herb of choice and salt Roast for 5 - 10 minutes or until done (don't over cook it or it'll be rubbery and sad) In a small pan melt the butter/oil/spread and add the lime juice and cumin. Cook for another minute without boiling. Before serving, pour the sauce over the fish (or as it was a bulk prep for me, on the sauce went and into the fridge it goes). I served my fish with mashed avocado with garlic, salt and pepper and a squeeze of lemon juice, with roasted zucchini, eggplant and carrot on the side.
